I always try to keep my lunch as healthy as possible. This couscous salad is super healthy and loaded with things to help keep you feeling full for hours.
This couscous lunch, teamed with a porridge breakfast is the perfect fuel your body needs for a busy day!
You will need:
- Dried cranberries
- Spring onion
- Pine nuts
Simply make your couscous as normal, add a table spoon of olive oil and as much lemon as you prefer for your taste. Set it aside.
Chop your spring onion. Finely chop your almonds. Add them to the couscous with a handful of cranberries and pine nuts. Stir through, fluff up and serve.
